- 1 pound large shrimp, cleaned and deveined
- 8 ounces spaghetti or fettuccine
- 4 tablespoons unsalted butter
- 4 tablespoons extra virgin olive oil
- 4 cloves garlic, finely chopped
- 1 teaspoon crushed red pepper (adjust for spice preference)
- 1 cup halved cherry tomatoes
- 1 cup fresh baby spinach
- 1/2 cup dry white wine
- 1/4 cup freshly chopped parsley
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Begin by boiling water in a large pot and cook the spaghetti or fettuccine according to the package directions until it’s al dente. Drain the pasta, making sure to reserve about half a cup of the cooking water for later use.
- In a spacious skillet, combine the butter and olive oil over medium heat. Once melted, add the chopped garlic and crushed red pepper, stirring for roughly a minute until the garlic becomes aromatic.
- Introduce the shrimp to the skillet, seasoning them with salt and pepper. Sauté for about 2-3 minutes on each side until they are fully cooked and have a lovely pink hue.
- Next, toss in the halved cherry tomatoes and baby spinach, cooking until the spinach is just wilted, which should take around 2 minutes.
- Pour in the dry white wine and let it simmer, allowing the flavors to meld and the wine to reduce for about 3-4 minutes.
- Add the drained pasta to the skillet, gently tossing everything together. If the dish appears too dry, gradually incorporate the reserved pasta water until you reach your desired consistency.
- Take the skillet off the heat and mix in the lemon juice and chopped parsley. Taste and adjust the seasoning if necessary.
- Serve hot, generously topped with grated Parmesan cheese for an extra layer of flavor.
