  • 1 pound large shrimp, cleaned and deveined
  • 8 ounces spaghetti or fettuccine
  • 4 tablespoons unsalted butter
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, finely chopped
  • 1 teaspoon crushed red pepper (adjust for spice preference)
  • 1 cup halved cherry tomatoes
  • 1 cup fresh baby spinach
  • 1/2 cup dry white wine
  • 1/4 cup freshly chopped parsley
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Begin by boiling water in a large pot and cook the spaghetti or fettuccine according to the package directions until it’s al dente. Drain the pasta, making sure to reserve about half a cup of the cooking water for later use.
  2. In a spacious skillet, combine the butter and olive oil over medium heat. Once melted, add the chopped garlic and crushed red pepper, stirring for roughly a minute until the garlic becomes aromatic.
  3. Introduce the shrimp to the skillet, seasoning them with salt and pepper. Sauté for about 2-3 minutes on each side until they are fully cooked and have a lovely pink hue.
  4. Next, toss in the halved cherry tomatoes and baby spinach, cooking until the spinach is just wilted, which should take around 2 minutes.
  5. Pour in the dry white wine and let it simmer, allowing the flavors to meld and the wine to reduce for about 3-4 minutes.
  6. Add the drained pasta to the skillet, gently tossing everything together. If the dish appears too dry, gradually incorporate the reserved pasta water until you reach your desired consistency.
  7. Take the skillet off the heat and mix in the lemon juice and chopped parsley. Taste and adjust the seasoning if necessary.
  8. Serve hot, generously topped with grated Parmesan cheese for an extra layer of flavor.
