Description

A creamy and flavorful Tuscan Butter Shrimp dish that is easy to prepare and perfect for a delightful meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  2. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque.
  3. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
  5. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.
  6. Stir in the spinach, Italian seasoning, and red pepper flakes (if using). Cook until the spinach wilts, about 2 minutes.
  7. Return the shrimp to the skillet and mix well.
  8. Sprinkle with Parmesan cheese and lemon juice, stirring to combine.
  9. Remove from heat and garnish with fresh basil before serving.

Notes

  • For a creamier sauce, add 1/4 cup heavy cream after adding the spinach.
  • To make it a complete meal, serve over cooked pasta or rice.
