- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- Juice of 1/2 lemon
Instructions
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
- Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Stir in the spinach, Italian seasoning, and red pepper flakes (if using). Cook until the spinach wilts, about 2 minutes.
- Return the shrimp to the skillet and mix well.
- Sprinkle with Parmesan cheese and lemon juice, stirring to combine.
- Remove from heat and garnish with fresh basil before serving.
Notes
- For a creamier sauce, add 1/4 cup heavy cream after adding the spinach.
- To make it a complete meal, serve over cooked pasta or rice.
