  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, rinsed and drained
  • 1 head of romaine lettuce, leaves separated
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1/2 cup salsa
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
  2. Add the ground turkey to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
  3. Stir in the taco seasoning, diced tomatoes, corn, and black beans. Cook for another 5 minutes, allowing the flavors to meld together.
  4. While the turkey mixture is cooking, prepare the lettuce wraps by washing and drying the romaine leaves.
