- 2 large eggs
- 4 sheets of brik pastry (or phyllo dough)
- 1 cup cooked and seasoned ground meat (beef or lamb)
- 1/2 cup fresh parsley, chopped
- 1/4 cup onion, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup harissa paste (adjust to taste)
- Vegetable oil for frying
Instructions
- In a bowl, combine the cooked ground meat, parsley, onion, cumin, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Lay one sheet of brik pastry on a clean surface. Place a generous tablespoon of the meat mixture in the center of the pastry.
- Make a small well in the center of the filling and crack an egg into it.
- Fold the pastry over the filling to create a triangle shape, sealing the edges by pressing them together.
- Repeat with the remaining sheets of pastry and filling.
- Heat about 1 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, carefully place the briks in the skillet, a few at a time, and fry until golden brown and crispy, about 2-3 minutes per side.
- Remove the briks from the oil and drain on paper towels.
- Serve hot with harissa on the side for dipping.
Notes
- For a vegetarian option, substitute the ground meat with sautéed mushrooms and spinach.
- Experiment with different fillings such as feta cheese and olives for a Mediterranean twist.
