A delicious and refreshing Thai dish featuring ground duck served in lettuce cups.
Ingredients

- 1 pound ground duck
- 2 tablespoons vegetable oil
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1 teaspoon chili flakes (adjust to taste)
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup finely chopped red onion
- 1 head of butter lettuce or romaine lettuce, leaves separated
- 1/4 cup crushed peanuts (optional for garnish)
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the ground duck and cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks.
- Once the duck is cooked, remove the skillet from heat and let it cool slightly.
- In a small bowl, whisk together the fish sauce, lime juice, sugar, and chili flakes until the sugar is dissolved.
- Pour the sauce over the cooked duck and stir to combine. Add the mint, cilantro, green onions, and red onion, mixing well.
- To serve, spoon the duck mixture into the lettuce leaves, creating cups. Garnish with crushed peanuts if desired.
- Enjoy immediately, or chill in the refrigerator for up to 30 minutes before serving for a refreshing twist.
Notes
- For a lighter version, substitute ground turkey or chicken for the duck.
- Add diced cucumber or shredded carrots to the filling for extra crunch and freshness.
