A delicious and refreshing Thai dish featuring ground duck served in lettuce cups.


Ingredients

  • 1 pound ground duck
  • 2 tablespoons vegetable oil
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • 1 teaspoon chili flakes (adjust to taste)
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped red onion
  • 1 head of butter lettuce or romaine lettuce, leaves separated
  • 1/4 cup crushed peanuts (optional for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the ground duck and cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks.
  2. Once the duck is cooked, remove the skillet from heat and let it cool slightly.
  3. In a small bowl, whisk together the fish sauce, lime juice, sugar, and chili flakes until the sugar is dissolved.
  4. Pour the sauce over the cooked duck and stir to combine. Add the mint, cilantro, green onions, and red onion, mixing well.
  5. To serve, spoon the duck mixture into the lettuce leaves, creating cups. Garnish with crushed peanuts if desired.
  6. Enjoy immediately, or chill in the refrigerator for up to 30 minutes before serving for a refreshing twist.

Notes

  • For a lighter version, substitute ground turkey or chicken for the duck.
