Instructions
- In a medium saucepan, combine the erythritol, water, cinnamon, and salt.
- Heat over medium heat, stirring until the erythritol dissolves completely.
- Bring the mixture to a boil and let it cook without stirring for about 10-15 minutes, or until it reaches a light amber color on a candy thermometer (around 300°F).
- Remove the saucepan from heat and quickly stir in the almonds and vanilla extract until they are well coated.
- Prepare a baking sheet by greasing it with butter or coconut oil.
- Pour the almond mixture onto the sheet and spread it out evenly with a spatula.
- Allow the brittle to cool completely at room temperature, which should take about 30-45 minutes.
- Once cooled, break it into pieces.
