Ingredients

  • 1 cup erythritol or your preferred sugar substitute
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter or coconut oil (for greasing)

Instructions

  1. In a medium saucepan, combine the erythritol, water, cinnamon, and salt.
  2. Heat over medium heat, stirring until the erythritol dissolves completely.
  3. Bring the mixture to a boil and let it cook without stirring for about 10-15 minutes, or until it reaches a light amber color on a candy thermometer (around 300°F).
  4. Remove the saucepan from heat and quickly stir in the almonds and vanilla extract until they are well coated.
  5. Prepare a baking sheet by greasing it with butter or coconut oil.
  6. Pour the almond mixture onto the sheet and spread it out evenly with a spatula.
  7. Allow the brittle to cool completely at room temperature, which should take about 30-45 minutes.
