- 1 teaspoon psyllium husk powder
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/4 cup shredded mozzarella cheese
- 1/4 cup softened cream cheese
- 1 large egg
- 1 cup fresh spinach, finely chopped
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil (for frying)
Instructions
- Mix the almond flour, psyllium husk powder, baking powder, and sea salt in a large bowl until well combined.
- Incorporate the shredded mozzarella and softened cream cheese into the dry ingredients, blending until crumbly.
- In a separate bowl, beat the egg and add it to the flour mixture, stirring until a cohesive dough forms.
- Gently fold in the finely chopped spinach, onion powder, and black pepper until evenly mixed.
- Divide the dough into four equal pieces and roll each into a ball.
- Place a ball between two sheets of parchment paper and flatten it with a rolling pin to about 1/4 inch thickness.
- Heat olive oil in a skillet over medium heat and add one flatbread to the pan.
- Cook for approximately 2-3 minutes on each side until golden brown and fully cooked.
- Repeat for the remaining flatbreads, adding more olive oil as necessary.
- Enjoy warm, either on their own or stuffed with your favorite low-carb fillings!
