Description
A delicious South African dish featuring flavorful boerewors sausages served with spicy chakalaka.

- 1 pound ground beef
- 1 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped fresh parsley
- 2 cloves garlic, minced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon allspice
- 1/4 cup red wine vinegar
- 1/4 cup water
- Natural hog casings (for sausage)
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 can (14 ounces) diced tomatoes
- 1 can (15 ounces) baked beans
- 1 tablespoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, onion, parsley, garlic, coriander, cumin, paprika, salt, black pepper, nutmeg, allspice, red wine vinegar, and water. Mix well until all ingredients are fully incorporated.
- Rinse the hog casings in cold water and soak them in water for about 30 minutes. Rinse again before using.
- Stuff the sausage mixture into the casings, being careful not to overfill. Twist sausages into 6-inch links and tie off the ends. Prick the sausages with a needle to release air bubbles.
- Preheat a grill or skillet over medium heat. Cook the boerewors for about 15-20 minutes, turning occasionally, until browned and cooked through.
- For the chakalaka, heat the vegetable oil in a large skillet over medium heat. Add the onion and bell pepper, and sauté until softened, about 5 minutes.
- Stir in the garlic and ginger, cooking for another minute until fragrant. Add the diced tomatoes, baked beans, curry powder, paprika, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally.
- Serve the boerewors hot with a generous scoop of chakalaka on the side. Garnish with fresh cilantro.
Notes
- For a spicier version of chakalaka, add chopped jalapeños or a dash of hot sauce.
- Substitute ground turkey or chicken for a leaner boerewors option while maintaining flavor.
