Simple 3-Ingredient Keto Crepes are delightfully easy!


Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 1 cup unsweetened almond milk

Instructions

  1. In a mixing bowl, combine the almond flour and eggs. Whisk until smooth and well combined.
  2. Gradually add the almond milk while continuing to whisk until the batter is thin and free of lumps. Let the batter rest for about 10 minutes.
  3. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of butter.
  4. Pour about 1/4 cup of batter into the skillet, tilting the pan to spread the batter evenly into a thin layer.
  5. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1-2 minutes on the other side.
  6. Repeat with the remaining batter, greasing the skillet as needed.

Notes

  • For a sweeter crepe, add 1 tablespoon of erythritol or your preferred keto-friendly sweetener to the batter.
