- 8 slices of bacon, chopped
- 1 medium onion, diced
- 2 cups mushrooms, sliced (button or cremini)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 4 cups cubed day-old bread
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the sliced mushrooms and cook for another 5 minutes until softened. Stir in the minced garlic, thyme, rosemary, black pepper, and salt, cooking for an additional minute.
- In a large bowl, whisk together the eggs and milk until well combined. Stir in the cooked bacon, mushroom mixture, and shredded cheddar cheese.
- Gently fold in the cubed bread until evenly coated. Pour the mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set and golden brown on top. Let it cool for 5 minutes before serving.
- Garnish with fresh parsley before serving.
Notes
- For a vegetarian version, omit the bacon and substitute with sautéed spinach or bell peppers.
- Add a pinch of red pepper flakes for a bit of heat or swap the cheddar cheese for your favorite cheese variety for a different flavor profile.
