Description

A delicious and hearty casserole perfect for Christmas gatherings, featuring savory mushrooms and crispy bacon.


Ingredients

  • 8 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced (button or cremini)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 4 cups cubed day-old bread
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the sliced mushrooms and cook for another 5 minutes until softened. Stir in the minced garlic, thyme, rosemary, black pepper, and salt, cooking for an additional minute.
  4. In a large bowl, whisk together the eggs and milk until well combined. Stir in the cooked bacon, mushroom mixture, and shredded cheddar cheese.
  5. Gently fold in the cubed bread until evenly coated. Pour the mixture into the prepared baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and golden brown on top. Let it cool for 5 minutes before serving.
  7. Garnish with fresh parsley before serving.

Notes

  • For a vegetarian version, omit the bacon and substitute with sautéed spinach or bell peppers.
  • Add a pinch of red pepper flakes for a bit of heat or swap the cheddar cheese for your favorite cheese variety for a different flavor profile.
