Delicious Salted Caramel Keto Pecan Turtles that are perfect for a low-carb treat.


Ingredients

  • 1 cup pecan halves
  • 1 cup sugar-free chocolate chips
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup heavy cream
  • 1/4 cup unsweetened almond butter
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Spread the pecan halves on a baking sheet and toast them in the oven for about 8-10 minutes, or until fragrant. Remove from the oven and let cool.
  3. In a medium saucepan over medium heat, combine the heavy cream, almond butter, powdered erythritol, and vanilla extract. Stir continuously until the mixture is smooth and begins to bubble.
  4. Reduce the heat and let it simmer for 5-7 minutes until it thickens slightly.
  5. Line a baking sheet with parchment paper. Place clusters of toasted pecans (about 3-4 pecans per cluster) on the parchment.
  6. Drizzle the caramel mixture over each cluster, ensuring they are well-coated. Allow the caramel to cool and set for about 15 minutes.
  7. Melt the sugar-free chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  8. Drizzle the melted chocolate over the caramel-coated pecan clusters.
  9. Sprinkle a small pinch of sea salt over each turtle.
  10. Place the baking sheet in the refrigerator for at least 30 minutes to allow the chocolate to harden.
  11. Once set, remove the turtles from the parchment paper and serve.
  12. Store any leftovers in an airtight container in the refrigerator.

Notes

  • For a richer flavor, try adding a teaspoon of instant coffee granules to the caramel mixture.
  • You can also substitute the pecans with walnuts or almonds for a different taste.
