Description
A silky and delightful Raspberry-Hibiscus Panna Cotta that combines the floral notes of hibiscus with the tartness of fresh raspberries.

- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 tablespoon dried hibiscus flowers
- 1 teaspoon vanilla extract
- 1 packet (2 1/4 teaspoons) unflavored gelatin
- 1/4 cup cold water
- 1 cup fresh raspberries
- 1 tablespoon lemon juice
- Mint leaves for garnish (optional)
Instructions
- In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
- Add the dried hibiscus flowers to the hot cream mixture. Cover and let steep for 15-20 minutes to infuse the flavor.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- Strain the hibiscus-infused cream mixture through a fine-mesh sieve into a clean saucepan, discarding the hibiscus flowers. Return the strained mixture to low heat.
- Stir in the bloomed gelatin and vanilla extract until fully dissolved. Remove from heat and let cool slightly.
- Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours or until set.
- While the panna cotta sets, prepare the raspberry sauce by blending the fresh raspberries and lemon juice in a blender until smooth. Strain through a fine-mesh sieve to remove the seeds, if desired.
- Once the panna cotta is set, serve it chilled with a drizzle of raspberry sauce on top. Garnish with mint leaves if using.
Notes
- For a dairy-free version, substitute coconut cream for heavy cream and almond milk for whole milk.
- Add a splash of your favorite liqueur, like Chambord or Grand Marnier, to the cream mixture for an adult twist.
