Description

A silky and delightful Raspberry-Hibiscus Panna Cotta that combines the floral notes of hibiscus with the tartness of fresh raspberries.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon dried hibiscus flowers
  • 1 teaspoon vanilla extract
  • 1 packet (2 1/4 teaspoons) unflavored gelatin
  • 1/4 cup cold water
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice
  • Mint leaves for garnish (optional)

Instructions

  1. In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
  2. Add the dried hibiscus flowers to the hot cream mixture. Cover and let steep for 15-20 minutes to infuse the flavor.
  3. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  4. Strain the hibiscus-infused cream mixture through a fine-mesh sieve into a clean saucepan, discarding the hibiscus flowers. Return the strained mixture to low heat.
  5. Stir in the bloomed gelatin and vanilla extract until fully dissolved. Remove from heat and let cool slightly.
  6. Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours or until set.
  7. While the panna cotta sets, prepare the raspberry sauce by blending the fresh raspberries and lemon juice in a blender until smooth. Strain through a fine-mesh sieve to remove the seeds, if desired.
  8. Once the panna cotta is set, serve it chilled with a drizzle of raspberry sauce on top. Garnish with mint leaves if using.

Notes

  • For a dairy-free version, substitute coconut cream for heavy cream and almond milk for whole milk.
  • Add a splash of your favorite liqueur, like Chambord or Grand Marnier, to the cream mixture for an adult twist.
