Description

Rabbit Cacciatore is a hearty Italian dish featuring tender rabbit pieces simmered in a flavorful tomato-based sauce with vegetables and herbs.


Ingredients

  • 2 pounds rabbit, cut into pieces
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced (red or green)
  • 1 cup mushrooms, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides, about 5-7 minutes. Remove the rabbit from the pan and set aside.
  2. In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Add the garlic and mushrooms, cooking for an additional 2-3 minutes.
  3. Stir in the diced tomatoes, chicken broth, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.
  4. Return the browned rabbit pieces to the skillet, nestling them into the sauce. Cover and reduce the heat to low. Let it simmer for about 1 hour, or until the rabbit is tender and cooked through.
  5. Taste the sauce and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

  • For a richer flavor, add a splash of red wine to the sauce before simmering.
