- 2 pounds rabbit, cut into pieces
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced (red or green)
- 1 cup mushrooms, sliced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides, about 5-7 minutes. Remove the rabbit from the pan and set aside.
- In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Add the garlic and mushrooms, cooking for an additional 2-3 minutes.
- Stir in the diced tomatoes, chicken broth, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.
- Return the browned rabbit pieces to the skillet, nestling them into the sauce. Cover and reduce the heat to low. Let it simmer for about 1 hour, or until the rabbit is tender and cooked through.
- Taste the sauce and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, add a splash of red wine to the sauce before simmering.
- You can substitute rabbit with chicken thighs or drumsticks if rabbit is not available.
