  • 1 pound monkfish fillet, cut into 4 equal pieces
  • 8 ounces thinly sliced prosciutto
  • 2 tablespoons olive oil
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Season the monkfish pieces with salt, pepper, rosemary, and thyme. Drizzle with lemon juice and half of the olive oil.
  3. Lay slices of prosciutto on a clean surface, slightly overlapping them. Place a piece of monkfish at one end and roll it up tightly in the prosciutto. Repeat with the remaining monkfish pieces.
  4. Place the wrapped monkfish on the prepared baking sheet. Drizzle with the remaining olive oil and sprinkle with lemon zest.
  5. Bake in the preheated oven for 20-25 minutes, or until the prosciutto is crispy and the fish is cooked through.
  6. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
