- 1 pound monkfish fillet, cut into 4 equal pieces
- 8 ounces thinly sliced prosciutto
- 2 tablespoons olive oil
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Season the monkfish pieces with salt, pepper, rosemary, and thyme. Drizzle with lemon juice and half of the olive oil.
- Lay slices of prosciutto on a clean surface, slightly overlapping them. Place a piece of monkfish at one end and roll it up tightly in the prosciutto. Repeat with the remaining monkfish pieces.
- Place the wrapped monkfish on the prepared baking sheet. Drizzle with the remaining olive oil and sprinkle with lemon zest.
- Bake in the preheated oven for 20-25 minutes, or until the prosciutto is crispy and the fish is cooked through.
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.

- For added flavor, consider marinating the monkfish in lemon juice, olive oil, and herbs for 30 minutes before wrapping.
