Description
A delicious Portuguese dish featuring fresh littleneck clams cooked in a garlic butter sauce.

- 2 pounds fresh littleneck clams, scrubbed
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- In a large pot, bring about 2 inches of water to a boil. Add the clams and cover the pot. Steam the clams for about 5-7 minutes, or until they open. Discard any that do not open.
- In a separate large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1-2 minutes until the garlic is fragrant but not browned.
- Carefully add the steamed clams to the skillet, along with the lemon juice, chopped parsley, salt, and pepper. Toss everything together gently to coat the clams in the garlic butter sauce.
- Cook for an additional 2-3 minutes to heat through and allow the flavors to meld. Remove from heat.
- Serve the clams hot, garnished with extra parsley and lemon wedges on the side.
Notes
- For a richer flavor, add a splash of white wine to the skillet after sautéing the garlic.
- Serve with crusty bread to soak up the delicious garlic butter sauce.
