A unique and refreshing dessert that combines the tangy flavors of pickle brine and lemonade, perfect for hot summer days.


Ingredients

  • 2 cups lemonade
  • 1/2 cup dill pickle brine
  • 1/4–1/2 cup sugar
  • 1 Tbsp lemon zest
  • 1–2 tsp finely chopped dill (optional)

Instructions

  1. In a mixing bowl, whisk together the lemonade, dill pickle brine, sugar, and lemon zest until well combined.
  2. Pour the mixture into a shallow pan and place it in the freezer.
  3. After 60 minutes, use a fork to scrape the mixture, breaking up any ice crystals.
  4. Continue to scrape the granita every 30 minutes for 3 to 4 hours, until it is fluffy and has a snow-like texture.
  5. If using, stir in the finely chopped dill before serving.
  6. Scoop the granita into bowls and serve immediately.

Notes

  • Adjust the sugar according to your taste preference.
  • For a stronger dill flavor, add more chopped dill.
  • This granita can be made a day in advance and stored in the freezer.
