Description

Ingredients

  • 2 pounds boneless chicken thighs, cut into 1.5-inch pieces
  • 1 large onion, grated
  • 1/4 cup plain yogurt
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground saffron, dissolved in 2 tablespoons hot water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Skewers (soaked in water if wooden)

Instructions

  1. In a large bowl, combine the grated onion, yogurt, olive oil, lemon juice, minced garlic, saffron water, salt, black pepper, turmeric, paprika, and cayenne pepper. Mix well to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
  4. Preheat your grill to medium-high heat.
  5. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
  6. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  7. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
  9. Serve the kababs with warm pita bread, rice, and a side of grilled vegetables or a fresh salad.

  • For a smoky flavor, consider adding a few pieces of lemon or onion to the skewers while grilling.
