- 2 pounds boneless chicken thighs, cut into 1.5-inch pieces
- 1 large onion, grated
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 1 teaspoon ground saffron, dissolved in 2 tablespoons hot water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Skewers (soaked in water if wooden)
Instructions
- In a large bowl, combine the grated onion, yogurt, olive oil, lemon juice, minced garlic, saffron water, salt, black pepper, turmeric, paprika, and cayenne pepper. Mix well to create a marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat.
- If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Serve the kababs with warm pita bread, rice, and a side of grilled vegetables or a fresh salad.
Notes
- For a smoky flavor, consider adding a few pieces of lemon or onion to the skewers while grilling.
- For a vegetarian option, substitute chicken with firm tofu or marinated vegetables like bell peppers, zucchini, and mushrooms.
