- 2 cups pea shoots, rinsed and dried
- 8 ounces halloumi cheese, sliced into 1/4-inch thick pieces
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
Instructions
- In a large bowl, combine the pea shoots, cherry tomatoes, cucumber, red onion, and mint leaves. Toss gently to mix the ingredients.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to create a dressing.
- Heat a non-stick skillet over medium heat. Add the sliced halloumi cheese and cook for about 2-3 minutes on each side, or until golden brown and crispy.
- Once the halloumi is cooked, remove it from the skillet and let it cool slightly.
- Drizzle the dressing over the salad mixture and toss gently to coat.
- Top the salad with the warm halloumi slices and serve immediately.
Notes
- For a heartier salad, add cooked quinoa or chickpeas for extra protein and fiber.
- Try substituting the halloumi with feta cheese for a different flavor profile.
