Ingredients

  • 2 cups pea shoots, rinsed and dried
  • 8 ounces halloumi cheese, sliced into 1/4-inch thick pieces
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped

Instructions

  1. In a large bowl, combine the pea shoots, cherry tomatoes, cucumber, red onion, and mint leaves. Toss gently to mix the ingredients.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to create a dressing.
  3. Heat a non-stick skillet over medium heat. Add the sliced halloumi cheese and cook for about 2-3 minutes on each side, or until golden brown and crispy.
  4. Once the halloumi is cooked, remove it from the skillet and let it cool slightly.
  5. Drizzle the dressing over the salad mixture and toss gently to coat.
  6. Top the salad with the warm halloumi slices and serve immediately.
