Ingredients

  • 1 pound large sea scallops, patted dry
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Season the scallops with salt and black pepper on both sides.
  3. Carefully place the scallops in the skillet, making sure not to overcrowd the pan. Sear for about 2-3 minutes without moving them until a golden crust forms.
  4. Flip the scallops and cook for an additional 2-3 minutes until they are opaque and cooked through. Remove scallops from the skillet and set aside.
  5. In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Stir in the lemon juice and lemon zest, cooking for another minute.
  7. Return the scallops to the skillet, gently tossing them in the garlic lemon butter to coat.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the garlic butter.
  • Serve the scallops over a bed of creamy risotto or alongside sautéed asparagus for a complete meal.
