- 1 pound large sea scallops, patted dry
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Season the scallops with salt and black pepper on both sides.
- Carefully place the scallops in the skillet, making sure not to overcrowd the pan. Sear for about 2-3 minutes without moving them until a golden crust forms.
- Flip the scallops and cook for an additional 2-3 minutes until they are opaque and cooked through. Remove scallops from the skillet and set aside.
- In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the lemon juice and lemon zest, cooking for another minute.
- Return the scallops to the skillet, gently tossing them in the garlic lemon butter to coat.
- Serve immediately, garnished with fresh parsley.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the garlic butter.
- Serve the scallops over a bed of creamy risotto or alongside sautéed asparagus for a complete meal.
