- 2 large ostrich steaks (about 1 pound total)
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup breadcrumbs
Instructions
- Preheat your oven to 375°F.
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, sun-dried tomatoes, basil, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Take each ostrich steak and carefully cut a pocket into the side, making sure not to cut all the way through.
- Stuff each pocket with the cheese and spinach mixture, pressing gently to ensure it is filled.
- In a shallow dish, spread the breadcrumbs. Roll each stuffed ostrich steak in the breadcrumbs until fully coated.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed ostrich steaks and sear for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the internal temperature of the ostrich reaches 160°F.
- Remove from the oven and let rest for 5 minutes before slicing and serving.

- For a twist, try adding crumbled feta cheese to the stuffing mixture for a tangy flavor.
