Ingredients

  • 2 large ostrich steaks (about 1 pound total)
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, sun-dried tomatoes, basil, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Take each ostrich steak and carefully cut a pocket into the side, making sure not to cut all the way through.
  4. Stuff each pocket with the cheese and spinach mixture, pressing gently to ensure it is filled.
  5. In a shallow dish, spread the breadcrumbs. Roll each stuffed ostrich steak in the breadcrumbs until fully coated.
  6. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed ostrich steaks and sear for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the internal temperature of the ostrich reaches 160°F.
  8. Remove from the oven and let rest for 5 minutes before slicing and serving.
