A rich and decadent dessert with layers of almond sponge, coffee, and chocolate ganache.

- 1 cup almond flour
- 1 cup powdered sugar
- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, melted
- 1/2 cup heavy cream
- 1/2 cup dark chocolate (70% cocoa), chopped
- 1/4 cup brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 1/4 cup simple syrup (1:1 ratio of sugar to water)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a bowl, whisk together almond flour, powdered sugar, and 2 eggs until smooth.
- In a separate bowl, beat the remaining 2 eggs and granulated sugar until pale and fluffy. Fold in the almond mixture.
- Sift together all-purpose flour, cocoa powder, and salt. Gently fold into the egg mixture until just combined.
- Pour in the melted butter and mix until smooth. Spread the batter evenly in the prepared pan.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely in the pan.
- While the cake cools, prepare the ganache by heating the heavy cream until just simmering. Pour over the chopped dark chocolate and let sit for 5 minutes. Stir until smooth.
- In a small bowl, mix the brewed coffee, coffee liqueur (if using), and simple syrup. Brush the mixture over the cooled cake layers.
- Cut the cake into three equal rectangles. Place one layer on a serving platter, spread a layer of ganache on top, and repeat with the second layer.
- Top with the final layer of cake and pour the remaining ganache over the top, smoothing it out with a spatula.
- Refrigerate for at least 2 hours before slicing to allow the ganache to set.
Notes
- For a more intense coffee flavor, increase the amount of coffee liqueur or add espresso powder to the ganache.
- You can substitute the almond flour with all-purpose flour for a gluten-free version, but the texture will differ slightly.
