Description

A rich and decadent dessert with layers of almond sponge, coffee, and chocolate ganache.

Ingredients

Scale
  • 1 cup almond flour
  • 1 cup powdered sugar
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1/2 cup heavy cream
  • 1/2 cup dark chocolate (70% cocoa), chopped
  • 1/4 cup brewed coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 1/4 cup simple syrup (1:1 ratio of sugar to water)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together almond flour, powdered sugar, and 2 eggs until smooth.
  3. In a separate bowl, beat the remaining 2 eggs and granulated sugar until pale and fluffy. Fold in the almond mixture.
  4. Sift together all-purpose flour, cocoa powder, and salt. Gently fold into the egg mixture until just combined.
  5. Pour in the melted butter and mix until smooth. Spread the batter evenly in the prepared pan.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely in the pan.
  7. While the cake cools, prepare the ganache by heating the heavy cream until just simmering. Pour over the chopped dark chocolate and let sit for 5 minutes. Stir until smooth.
  8. In a small bowl, mix the brewed coffee, coffee liqueur (if using), and simple syrup. Brush the mixture over the cooled cake layers.
  9. Cut the cake into three equal rectangles. Place one layer on a serving platter, spread a layer of ganache on top, and repeat with the second layer.
  10. Top with the final layer of cake and pour the remaining ganache over the top, smoothing it out with a spatula.
  11. Refrigerate for at least 2 hours before slicing to allow the ganache to set.

Notes

  • For a more intense coffee flavor, increase the amount of coffee liqueur or add espresso powder to the ganache.
  • You can substitute the almond flour with all-purpose flour for a gluten-free version, but the texture will differ slightly.
