Ingredients

  • 1 pound ground turkey
  • 1 cup cauliflower rice
  • 1 cup diced mixed vegetables (carrots, peas, and corn)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 package (8 oz) almond flour pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add ground turkey to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
  4. Stir in cauliflower rice, mixed vegetables, thyme, rosemary, salt, and pepper. Cook for another 3-4 minutes until the vegetables are tender.
  5. Pour in chicken broth and heavy cream, stirring to combine. Let the mixture simmer for about 5 minutes until slightly thickened.
  6. Remove from heat and stir in shredded cheddar cheese until melted and well combined.
  7. Roll out the almond flour pie crust and cut it into circles to fit into a muffin tin. Press the circles into the muffin cups.
  8. Fill each crust with the turkey and vegetable mixture, then top with additional cheese if desired.
  9. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
  10. Allow to cool for a few minutes before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes or diced jalapeños to the turkey mixture.
  • Substitute ground turkey with shredded rotisserie chicken for a quicker option.
