Mediterranean Feta & Olive Keto Flatbreads are a delicious low-carb option perfect for any meal.


Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 teaspoon dried oregano
  • 1 large egg
  • 2 tablespoons extra virgin olive oil
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped black olives, pitted
  • ¼ cup chopped green olives, pitted
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a spacious bowl, mix together the almond flour, baking powder, sea salt, and dried oregano until well combined.
  3. In another bowl, beat the egg and olive oil together until smooth.
  4. Gradually incorporate the egg mixture into the dry ingredients, stirring until a cohesive dough forms.
  5. Gently fold in the crumbled feta, black olives, green olives, and parsley if desired, ensuring an even distribution.
  6. Divide the dough into four equal sections and flatten each into a round shape about ¼ inch thick.
  7. Arrange the flatbreads on the lined baking sheet and bake for 15-20 minutes, or until the edges turn a lovely golden hue.
