Ingredients

- 2 medium zucchinis, sliced into rounds
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the chicken pieces, olive oil, oregano, garlic powder, salt, and pepper. Toss until the chicken is well coated.
- In a greased 9×13 inch baking dish, layer the sliced zucchinis evenly across the bottom.
- Spread the seasoned chicken over the zucchini layer.
- Top the chicken with halved cherry tomatoes, sliced olives, and crumbled feta cheese.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
Notes
- For added flavor, marinate the chicken in the olive oil and spices for at least 30 minutes before baking.
- Substitute the feta cheese with goat cheese for a different flavor profile.
