Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chicken pieces, olive oil, oregano, garlic powder, salt, and pepper. Toss until the chicken is well coated.
  3. In a greased 9×13 inch baking dish, layer the sliced zucchinis evenly across the bottom.
  4. Spread the seasoned chicken over the zucchini layer.
  5. Top the chicken with halved cherry tomatoes, sliced olives, and crumbled feta cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
