- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon salt

- 1/2 cup pure maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, sunflower seeds, shredded coconut, salt, and ground cinnamon. Stir until well mixed.
- In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until combined.
- Pour the wet ingredients over the dry ingredients and mix thoroughly until everything is evenly coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown. Keep an eye on it to prevent burning.
- Remove from the oven and let it cool completely on the baking sheet. The granola will harden as it cools.
- Once cooled, break the granola into clusters and store in an airtight container.
