Description
Maltese Bragioli is a traditional dish made with thinly sliced beef flank steak rolled with a flavorful breadcrumb filling, cooked in a rich sauce.
Ingredients
Scale
- 1 pound beef flank steak, thinly sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup olive oil
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 bay leaf
Instructions
- Preheat your oven to 325°F.
- Lay the beef slices flat on a clean surface.
- In a bowl, combine breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, black pepper, and red pepper flakes. Mix well.
- Spoon the breadcrumb mixture onto each slice of beef, then roll them up tightly and secure with toothpicks or kitchen twine.
- In a large oven-safe skillet, heat olive oil over medium heat. Brown the beef rolls on all sides, about 5 minutes. Remove the rolls and set aside.
- In the same skillet, add beef broth, red wine, tomato paste, and bay leaf. Stir to combine, then return the beef rolls to the skillet.
- Bring to a simmer. Cover the skillet and transfer it to the preheated oven.
- Bake for 1.5 to 2 hours, or until the beef is tender.
- Remove from the oven and let it rest for 10 minutes before serving.
- Discard toothpicks or twine before plating.
Notes
- For a richer flavor, marinate the beef in red wine and herbs for a few hours before preparing.
- Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
