Description

Maltese Bragioli is a traditional dish made with thinly sliced beef flank steak rolled with a flavorful breadcrumb filling, cooked in a rich sauce.


Ingredients

  • 1 pound beef flank steak, thinly sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup olive oil
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 bay leaf

Instructions

  1. Preheat your oven to 325°F.
  2. Lay the beef slices flat on a clean surface.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, black pepper, and red pepper flakes. Mix well.
  4. Spoon the breadcrumb mixture onto each slice of beef, then roll them up tightly and secure with toothpicks or kitchen twine.
  5. In a large oven-safe skillet, heat olive oil over medium heat. Brown the beef rolls on all sides, about 5 minutes. Remove the rolls and set aside.
  6. In the same skillet, add beef broth, red wine, tomato paste, and bay leaf. Stir to combine, then return the beef rolls to the skillet.
  7. Bring to a simmer. Cover the skillet and transfer it to the preheated oven.
  8. Bake for 1.5 to 2 hours, or until the beef is tender.
  9. Remove from the oven and let it rest for 10 minutes before serving.
  10. Discard toothpicks or twine before plating.

Notes

  • For a richer flavor, marinate the beef in red wine and herbs for a few hours before preparing.
  • Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
