Description

A delicious low carb dessert featuring a spiced cranberry cheesecake filling rolled in a soft almond flour cake.


Ingredients

  • 1/4 cup erythritol (or your preferred low-carb sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup unsweetened cranberry sauce (sugar-free if possible)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a medium bowl, combine almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs and 1 teaspoon of vanilla extract until frothy.
  4. Gradually add the dry ingredients to the egg mixture, stirring until fully combined.
  5. Spread the batter evenly in the prepared jelly roll pan.
  6. Bake for 12-15 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the filling by beating the softened cream cheese and sour cream until smooth.
  8. Add the cranberry sauce, lemon juice, and 1/4 teaspoon vanilla extract to the cream cheese mixture. Mix until well combined.
  9. Once the cake is done, remove it from the oven and let it cool for about 5 minutes.
  10. Carefully invert the cake onto a clean kitchen towel dusted with almond flour and peel off the parchment paper.
  11. Spread the cream cheese filling evenly over the cake.
  12. Starting from one end, roll the cake tightly with the towel, creating a log shape.
  13. Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to set.
  14. To serve, slice the roll into 1-inch pieces. Enjoy chilled or at room temperature.

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the batter.
