Description
A delicious low carb dessert featuring a spiced cranberry cheesecake filling rolled in a soft almond flour cake.

- 1 cup almond flour
- 1/4 cup erythritol (or your preferred low-carb sweetener)
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup unsweetened cranberry sauce (sugar-free if possible)
- 1 teaspoon lemon juice
- 1/4 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
- In a medium bowl, combine almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt. Mix well.
- In a separate bowl, whisk together the eggs and 1 teaspoon of vanilla extract until frothy.
- Gradually add the dry ingredients to the egg mixture, stirring until fully combined.
- Spread the batter evenly in the prepared jelly roll pan.
- Bake for 12-15 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the filling by beating the softened cream cheese and sour cream until smooth.
- Add the cranberry sauce, lemon juice, and 1/4 teaspoon vanilla extract to the cream cheese mixture. Mix until well combined.
- Once the cake is done, remove it from the oven and let it cool for about 5 minutes.
- Carefully invert the cake onto a clean kitchen towel dusted with almond flour and peel off the parchment paper.
- Spread the cream cheese filling evenly over the cake.
- Starting from one end, roll the cake tightly with the towel, creating a log shape.
- Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to set.
- To serve, slice the roll into 1-inch pieces. Enjoy chilled or at room temperature.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the batter.
- You can substitute the cranberry sauce with any low-carb fruit preserve or puree, such as raspberry or strawberry, for a different flavor.
