- 1 cup almond flour
- 1/2 cup finely chopped pecans
- 1/4 cup erythritol or your preferred low-carb sweetener
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free dark chocolate chips
- Sea salt for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, chopped pecans, erythritol, salt, baking powder, and cocoa powder. Mix well.
- In another bowl, cream together the softened butter, egg, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the sugar-free dark chocolate chips.
- Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball with your palm and sprinkle a pinch of sea salt on top.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, consider mixing in a teaspoon of cinnamon or a splash of almond extract.
- Substitute walnuts or macadamia nuts for the pecans for a different nutty flavor.
