Description

Delight in every bite with these Low-Carb Pecan Softies topped with sea salt and dark chocolate.


Ingredients

  • 1 cup almond flour
  • 1/2 cup finely chopped pecans
  • 1/4 cup erythritol or your preferred low-carb sweetener
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free dark chocolate chips
  • Sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, chopped pecans, erythritol, salt, baking powder, and cocoa powder. Mix well.
  3. In another bowl, cream together the softened butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the sugar-free dark chocolate chips.
  5. Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently flatten each ball with your palm and sprinkle a pinch of sea salt on top.
  7. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, consider mixing in a teaspoon of cinnamon or a splash of almond extract.
  • Substitute walnuts or macadamia nuts for the pecans for a different nutty flavor.
