A delicious low carb treat that combines the rich flavors of caramel and pecans in a fudge square.
Ingredients

- 1 cup unsweetened almond butter
- 1/2 cup coconut oil
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar-free sweetener (like erythritol or monk fruit)
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
- 1/4 teaspoon salt
Instructions
- In a medium saucepan over low heat, melt the almond butter and coconut oil together, stirring until smooth.
- Remove the saucepan from heat and whisk in the cocoa powder, sugar-free sweetener, heavy cream, vanilla extract, and salt until fully combined and smooth.
- Fold in the chopped pecans until evenly distributed.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Pour the fudge mixture into the prepared baking dish and spread it evenly with a spatula.
- Refrigerate for at least 2 hours or until firm.
- Once set, lift the fudge out of the dish using the parchment paper and cut into squares.
Notes
- For a chocolate drizzle, melt 2 ounces of sugar-free chocolate and drizzle it over the top before refrigerating.
- Substitute walnuts or almonds for pecans for a different flavor and texture.
