Description

A delicious low carb treat that combines the rich flavors of caramel and pecans in a fudge square.


Ingredients

  • 1 cup unsweetened almond butter
  • 1/2 cup coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar-free sweetener (like erythritol or monk fruit)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan over low heat, melt the almond butter and coconut oil together, stirring until smooth.
  2. Remove the saucepan from heat and whisk in the cocoa powder, sugar-free sweetener, heavy cream, vanilla extract, and salt until fully combined and smooth.
  3. Fold in the chopped pecans until evenly distributed.
  4. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  5. Pour the fudge mixture into the prepared baking dish and spread it evenly with a spatula.
  6. Refrigerate for at least 2 hours or until firm.
  7. Once set, lift the fudge out of the dish using the parchment paper and cut into squares.

Notes

  • For a chocolate drizzle, melt 2 ounces of sugar-free chocolate and drizzle it over the top before refrigerating.
  • Substitute walnuts or almonds for pecans for a different flavor and texture.
