- 2 large eggs
- 1/2 cup sugar-free honey
- 1 tablespoon vanilla extract
- 1 1/2 cups almond flour
- 1/2 cup lupin flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar-free chocolate chips
- 12 Dunkies sandwich cookies
- 1/2 cup unsalted butter, melted and hot
- 3/4 cup granulated sweetener
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 3/4 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F and line a square baking pan with parchment paper.
- In a large bowl, mix together the softened butter and sugar-free honey until well combined. Add the eggs and vanilla extract, whisking until smooth.
- Stir in the almond flour, lupin flour, baking soda, and salt with a rubber spatula until almost combined. Fold in the sugar-free chocolate chips.
- Press the cookie dough into the bottom of the prepared pan, reserving some dough if necessary.
- Evenly press the Dunkies sandwich cookies on top of the cookie layer.
- In another large bowl, whisk together the melted butter and granulated sweetener until combined. Add the egg, egg yolk, and vanilla extract, beating with an electric mixer for 2 minutes until fully combined.
- Stir in the almond flour, cocoa powder, and salt with a rubber spatula until just combined. Be careful not to overmix.
- Pour the brownie batter over the cookie layer and Dunkies, smoothing it out with a spatula.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Remove from the oven and let cool before slicing into bars.

- Ensure the butter is softened for the best texture in the cookie layer.
- For added crunch, sprinkle chopped nuts like walnuts or pecans on top of the brownie layer before baking.
