Indulge in these delicious Low Carb Brookies that combine the best of both worlds: cookie and brownie layers, all while keeping it guilt-free!


Ingredients

  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup sugar-free honey
  • 1 tablespoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 cup lupin flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar-free chocolate chips
  • 12 Dunkies sandwich cookies
  • 1/2 cup unsalted butter, melted and hot
  • 3/4 cup granulated sweetener
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a square baking pan with parchment paper.
  2. In a large bowl, mix together the softened butter and sugar-free honey until well combined. Add the eggs and vanilla extract, whisking until smooth.
  3. Stir in the almond flour, lupin flour, baking soda, and salt with a rubber spatula until almost combined. Fold in the sugar-free chocolate chips.
  4. Press the cookie dough into the bottom of the prepared pan, reserving some dough if necessary.
  5. Evenly press the Dunkies sandwich cookies on top of the cookie layer.
  6. In another large bowl, whisk together the melted butter and granulated sweetener until combined. Add the egg, egg yolk, and vanilla extract, beating with an electric mixer for 2 minutes until fully combined.
  7. Stir in the almond flour, cocoa powder, and salt with a rubber spatula until just combined. Be careful not to overmix.
  8. Pour the brownie batter over the cookie layer and Dunkies, smoothing it out with a spatula.
  9. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out mostly clean.
  10. Remove from the oven and let cool before slicing into bars.

Notes

  • Ensure the butter is softened for the best texture in the cookie layer.
  • For added crunch, sprinkle chopped nuts like walnuts or pecans on top of the brownie layer before baking.
