- 1 ½ cups almond flour
- ½ cup shredded mozzarella cheese
- 2 large eggs
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon olive oil (for cooking)
Instructions
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, baking powder, salt, garlic powder, and onion powder. Mix well until all dry ingredients are combined.
- In a separate bowl, whisk the eggs until well beaten. Add the eggs to the dry mixture and stir until a dough forms. If the dough is too sticky, add a little more almond flour.
- Divide the dough into 4 equal portions and shape each portion into a ball. Flatten each ball into a disc about ½ inch thick.
- Heat olive oil in a skillet over medium heat. Once hot, add the arepa discs to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the arepas from the skillet and let them cool slightly. Once cool enough to handle, slice them open to create pockets.
- Fill the arepa pockets with your choice of fillings, such as grilled chicken, avocado, cheese, or sautéed vegetables.

- For a spicier kick, add 1 teaspoon of chili powder or diced jalapeños to the dough mixture.
- Experiment with different cheeses, such as cheddar or pepper jack, for varied flavors in your arepa pockets.
