Low-Carb Arepa Pockets are a delicious and guilt-free alternative to traditional arepas, perfect for those looking to reduce their carb intake while enjoying flavorful fillings.


Ingredients

  • 1 ½ cups almond flour
  • ½ cup shredded mozzarella cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. In a mixing bowl, combine almond flour, shredded mozzarella cheese, baking powder, salt, garlic powder, and onion powder. Mix well until all dry ingredients are combined.
  2. In a separate bowl, whisk the eggs until well beaten. Add the eggs to the dry mixture and stir until a dough forms. If the dough is too sticky, add a little more almond flour.
  3. Divide the dough into 4 equal portions and shape each portion into a ball. Flatten each ball into a disc about ½ inch thick.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the arepa discs to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. Remove the arepas from the skillet and let them cool slightly. Once cool enough to handle, slice them open to create pockets.
  6. Fill the arepa pockets with your choice of fillings, such as grilled chicken, avocado, cheese, or sautéed vegetables.
