A delightful and luxurious dish featuring avocados stuffed with a creamy lobster thermidor filling.

- 2 ripe avocados
- 1 pound cooked lobster meat, chopped
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1/2 cup shredded Gruyère cheese
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F.
- Cut the avocados in half and remove the pits. Scoop out a small amount of the flesh to create a larger cavity for the filling. Set the avocado halves aside.
- In a skillet over medium heat, add olive oil and sauté the onion until translucent, about 3-4 minutes. Add garlic and cook for an additional minute.
- Pour in the white wine and let it simmer for 2-3 minutes until reduced by half.
- Stir in the heavy cream, Dijon mustard, Worcestershire sauce, and season with salt and pepper. Allow the mixture to simmer for another 2-3 minutes.
- Add the chopped lobster meat and half of the Gruyère cheese to the skillet, mixing well until the cheese melts and everything is heated through.
- Spoon the lobster mixture into the avocado halves and place them in a baking dish.
- Sprinkle the remaining Gruyère cheese on top of the stuffed avocados.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
Notes
- For a spicy kick, add a pinch of cayenne pepper or a few dashes of hot sauce to the lobster mixture.
- Substitute the lobster with shrimp or crab for a different seafood flavor.
