Description
A delicious and creamy alternative to traditional mashed potatoes, loaded with cheese and flavor.
Ingredients
Scale
- 2 medium heads of cauliflower, broken into florets
- 4 tablespoons unsalted butter
- 1/2 cup softened cream cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup crumbled cooked bacon (optional)
Instructions
- Begin by boiling a large pot of water and adding the cauliflower florets. Cook them for about 10-15 minutes until they are tender enough to be easily pierced with a fork.
- Once cooked, drain the cauliflower and allow it to cool for a few minutes.
- In a large bowl, mix together the drained cauliflower, butter, cream cheese, cheddar cheese, sour cream, garlic powder, and a sprinkle of salt and pepper.
- Using a fork or a potato masher, mash the mixture until it reaches a creamy consistency, ensuring all ingredients are well combined.
- Fold in the green onions and bacon bits, if you choose to include them.
- Taste the mixture and adjust the seasoning according to your preference.
- Spoon the creamy cauliflower blend into a serving bowl, and if you like, sprinkle some extra cheddar cheese and green onions on top for garnish.
- Serve immediately while warm and enjoy the cheesy goodness!
Notes
- For a lighter twist, swap the cream cheese for Greek yogurt.
- Adding roasted garlic can enhance the flavor.
- For those who enjoy a bit of heat, consider incorporating diced jalapeños or a splash of hot sauce.
