Description
A traditional Lebanese dish made with raw ground meat and bulgur wheat, seasoned with spices and herbs.

- 1 pound lean ground beef or lamb
- 1 cup fine bulgur wheat
- 1 small onion, finely chopped
- 1/4 cup fresh mint leaves, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Pine nuts, for garnish (optional)
- Fresh vegetables (cucumbers, radishes, etc.) for serving
Instructions
- Rinse the bulgur wheat under cold water until the water runs clear. Drain well and let it sit for about 30 minutes to soften.
- In a large mixing bowl, combine the ground beef or lamb, softened bulgur, chopped onion, mint, parsley, allspice, cinnamon, salt, and black pepper.
- Use your hands to mix the ingredients thoroughly until well combined. The mixture should be smooth and slightly sticky.
- Drizzle in the olive oil and lemon juice, and mix again until evenly distributed.
- Taste the mixture and adjust seasoning if necessary. If you prefer a smoother texture, you can pulse the mixture in a food processor for a few seconds.
- Transfer the kibbeh mixture to a serving platter and shape it into a smooth, flat layer. Use a knife to score the top into diamond shapes if desired.
- Garnish with pine nuts if using, and serve immediately with fresh vegetables on the side.
Notes
- For a spicier version, add a pinch of cayenne pepper or a dash of hot sauce to the mixture.
- You can also substitute the ground meat with a plant-based alternative for a vegetarian option.
- Serve with pita bread for a more filling meal.
