- 1 pound ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 2 tablespoons olive oil
- 1 cup plain Greek yogurt
- 2 tablespoons fresh mint, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- In a large bowl, combine the ground lamb, breadcrumbs, chopped onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, black pepper, and beaten egg. Mix well until all ingredients are thoroughly combined.
- Shape the mixture into elongated meatballs or oval patties, about 2-3 inches long.
- Heat olive oil in a large oven-safe skillet over medium heat. Add the kofta and cook for about 3-4 minutes on each side until browned.
- Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the kofta are cooked through.
- While the kofta are baking, prepare the yogurt mint dip. In a small bowl, mix together the Greek yogurt, chopped mint, lemon juice, garlic powder, salt, and pepper until smooth.
- Once the kofta are done, serve them hot with the yogurt mint dip on the side.
Notes
- For added flavor, consider adding a pinch of cayenne pepper to the kofta mixture for a spicy kick.
- You can also substitute ground beef or chicken for the lamb if preferred.
- Serve with pita bread or over a bed of rice for a complete meal.
