Description

Discover this easy recipe for Lamb Kofta with a refreshing Yogurt Mint Dip.

Ingredients

Scale
  • 1 pound ground lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 2 tablespoons olive oil
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the ground lamb, breadcrumbs, chopped onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, black pepper, and beaten egg. Mix well until all ingredients are thoroughly combined.
  3. Shape the mixture into elongated meatballs or oval patties, about 2-3 inches long.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Add the kofta and cook for about 3-4 minutes on each side until browned.
  5. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the kofta are cooked through.
  6. While the kofta are baking, prepare the yogurt mint dip. In a small bowl, mix together the Greek yogurt, chopped mint, lemon juice, garlic powder, salt, and pepper until smooth.
  7. Once the kofta are done, serve them hot with the yogurt mint dip on the side.

Notes

  • For added flavor, consider adding a pinch of cayenne pepper to the kofta mixture for a spicy kick.
  • You can also substitute ground beef or chicken for the lamb if preferred.
  • Serve with pita bread or over a bed of rice for a complete meal.
