Korean BBQ Jackfruit Sliders are a delicious vegan delight, perfect for a flavorful meal.

- 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 cup Korean BBQ sauce
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar
- Salt and pepper to taste
- 8 slider buns
- 1 cup coleslaw mix
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Shred the drained jackfruit using your hands or a fork, then add it to the skillet. Stir to combine with the onion, garlic, and ginger.
- Pour in the Korean BBQ sauce, soy sauce, sesame oil, and rice vinegar. Mix well and cook for about 10-15 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized. Season with salt and pepper to taste.
- While the jackfruit is cooking, toast the slider buns in a separate pan or under the broiler until golden brown.
- To assemble the sliders, place a generous portion of the BBQ jackfruit on the bottom half of each bun. Top with coleslaw mix, sliced green onions, and a sprinkle of sesame seeds.
- Place the top half of the bun on each slider and serve immediately.
Notes
- For added heat, mix in some gochujang (Korean chili paste) into the BBQ sauce.
- Substitute the coleslaw mix with pickled vegetables for a tangy crunch.
