Description

Korean BBQ Jackfruit Sliders are a delicious vegan delight, perfect for a flavorful meal.

Ingredients

Scale
  • 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup Korean BBQ sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste
  • 8 slider buns
  • 1 cup coleslaw mix
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
  3. Shred the drained jackfruit using your hands or a fork, then add it to the skillet. Stir to combine with the onion, garlic, and ginger.
  4. Pour in the Korean BBQ sauce, soy sauce, sesame oil, and rice vinegar. Mix well and cook for about 10-15 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized. Season with salt and pepper to taste.
  5. While the jackfruit is cooking, toast the slider buns in a separate pan or under the broiler until golden brown.
  6. To assemble the sliders, place a generous portion of the BBQ jackfruit on the bottom half of each bun. Top with coleslaw mix, sliced green onions, and a sprinkle of sesame seeds.
  7. Place the top half of the bun on each slider and serve immediately.

Notes

  • For added heat, mix in some gochujang (Korean chili paste) into the BBQ sauce.
  • Substitute the coleslaw mix with pickled vegetables for a tangy crunch.
