- 2 cups unsweetened almond milk
- 1 cup heavy cream
- 1/2 cup erythritol or preferred keto sweetener
- 2 teaspoons vanilla extract
- 2 tablespoons gelatin powder
- 1/4 cup cold water
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
- In a saucepan, combine the almond milk, heavy cream, erythritol, and vanilla extract. Heat over medium heat until warm, but do not boil.
- Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.

- For a stronger vanilla flavor, you can add more vanilla extract.
