- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol (or preferred keto sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1/4 cup heavy cream
- 1 tablespoon strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- Unsweetened cocoa powder for dusting
Instructions
- Preheat the oven to 350°F. Line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together melted butter, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Divide the dough evenly among the muffin cups, pressing it down to form a cookie base.
- Bake for 10-12 minutes or until set. Allow to cool completely in the pan.
- In a separate bowl, beat together mascarpone cheese, heavy cream, brewed coffee, and coffee liqueur (if using) until smooth and creamy.
- Once the cookie cups are cool, spoon the mascarpone mixture on top of each cookie base.
- Dust the tops with unsweetened cocoa powder before serving.
- Chill in the refrigerator for at least 30 minutes to set before enjoying.
Notes
- For added flavor, consider folding in some sugar-free chocolate chips into the mascarpone mixture.
- You can also substitute the mascarpone with cream cheese for a different texture.
