Description

Keto Tiramisu Cookie Cups are a decadent low-carb dessert that combines the rich flavors of tiramisu in a cookie cup form, perfect for those following a keto diet.

Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 1 tablespoon strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • Unsweetened cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F. Line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
  3. In another bowl, whisk together melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Divide the dough evenly among the muffin cups, pressing it down to form a cookie base.
  6. Bake for 10-12 minutes or until set. Allow to cool completely in the pan.
  7. In a separate bowl, beat together mascarpone cheese, heavy cream, brewed coffee, and coffee liqueur (if using) until smooth and creamy.
  8. Once the cookie cups are cool, spoon the mascarpone mixture on top of each cookie base.
  9. Dust the tops with unsweetened cocoa powder before serving.
  10. Chill in the refrigerator for at least 30 minutes to set before enjoying.

Notes

  • For added flavor, consider folding in some sugar-free chocolate chips into the mascarpone mixture.
  • You can also substitute the mascarpone with cream cheese for a different texture.
