- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup powdered erythritol
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking powder
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 1/2 cup sugar-free dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, sea salt, and baking powder. Mix well.
- In a separate bowl, whisk together the melted butter, egg, peppermint extract, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball into a thin disc using your fingers or the bottom of a glass.
- Bake for 10-12 minutes, or until the edges are firm. Remove from the oven and let cool completely on the baking sheet.
- While the cookies are cooling, melt the sugar-free dark chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Dip each cooled cookie into the melted chocolate, ensuring it’s fully coated, and place them back on the parchment paper.
- Once all cookies are coated, refrigerate for at least 30 minutes to set the chocolate.
Notes
- For a mintier flavor, increase the peppermint extract to 1 1/2 teaspoons.
- To make these cookies even more festive, consider adding crushed sugar-free peppermint candies on top of the chocolate before it sets.
