Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup powdered erythritol
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sugar-free dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, sea salt, and baking powder. Mix well.
  3. In a separate bowl, whisk together the melted butter, egg, peppermint extract, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball into a thin disc using your fingers or the bottom of a glass.
  6. Bake for 10-12 minutes, or until the edges are firm. Remove from the oven and let cool completely on the baking sheet.
  7. While the cookies are cooling, melt the sugar-free dark chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  8. Dip each cooled cookie into the melted chocolate, ensuring it’s fully coated, and place them back on the parchment paper.
  9. Once all cookies are coated, refrigerate for at least 30 minutes to set the chocolate.

Notes

  • For a mintier flavor, increase the peppermint extract to 1 1/2 teaspoons.
  • To make these cookies even more festive, consider adding crushed sugar-free peppermint candies on top of the chocolate before it sets.
