Ingredients

  • 1 pound ground beef or shredded chicken
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 8 large lettuce leaves (for wrapping)
  • 1/2 cup sour cream (for dipping)
  • 1/4 cup salsa (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef or chicken until fully cooked, breaking it apart with a spatula. Drain any excess fat if necessary.
  3. Stir in the chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant.
  4. Remove the skillet from heat and mix in the shredded cheddar cheese until melted and well combined.
  5. Lay out a lettuce leaf and spoon about 2-3 tablespoons of the meat mixture onto the center. Roll the leaf tightly around the filling to create a taquito shape.
  6. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are crispy.
  8. Serve warm with sour cream and salsa for dipping.
