Ingredients

  • 1 pound salmon fillet, diced into 1-inch pieces
  • 1/4 cup unsweetened Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons tandoori seasoning blend
  • 1 teaspoon dried garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional for added spice)
  • Wooden or metal skewers

Instructions

  1. Cut the salmon fillet into bite-sized cubes and place them in a bowl.
  2. In a separate mixing bowl, whisk together the Greek yogurt, lemon juice, olive oil, tandoori seasoning, garlic powder, ground ginger, salt, black pepper, and cayenne pepper until smooth.
  3. Pour the marinade over the salmon cubes, tossing gently to ensure each piece is evenly coated.
  4. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours.
  5. Preheat your grill to a medium-high setting.
  6. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  7. Carefully thread the marinated salmon pieces onto the skewers, leaving a small gap between each cube.
  8. Grill the skewers for approximately 4-5 minutes on each side, or until the salmon is opaque and flakes easily with a fork.
  9. Allow the skewers to rest for a few moments before serving.
