Keto ‘Taco’ Stuffed Mushrooms are a delicious and healthy twist on traditional tacos, using portobello mushrooms as the base.

- 16 large portobello mushrooms, stems discarded
- 1 pound ground beef or turkey
- 1 tablespoon extra virgin olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon taco spice blend
- 1 cup grated cheddar cheese
- 1/2 cup Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- Begin by heating your oven to 375°F.
- In a skillet, warm the olive oil over medium heat. Add the diced onion and sauté until it becomes soft and translucent, taking about 3-4 minutes.
- Incorporate the minced garlic and let it cook for about a minute, stirring frequently to avoid burning.
- Introduce the ground beef or turkey to the skillet, breaking it into smaller pieces with a spatula. Cook until it is browned and cooked through, approximately 5-7 minutes. Drain any excess grease if needed.
- Mix in the taco spice blend, along with salt and pepper, and allow it to cook for an additional 2 minutes to meld the flavors.
- Take the skillet off the heat and fold in half of the grated cheddar cheese and the chopped cilantro.
- Arrange the portobello mushrooms on a baking sheet with the gill side facing up. Generously fill each mushroom cap with the taco mixture.
- Sprinkle the remaining cheddar cheese over the stuffed mushrooms.
- Bake in the oven for 20-25 minutes, or until the mushrooms are tender and the cheese has melted and turned golden brown.
- Once out of the oven, let them cool slightly before serving. Top each with a spoonful of Greek yogurt for a creamy finish.
