Keto Spinach Fatayer Pockets are savory pockets filled with a delicious spinach and feta mixture, wrapped in a low-carb almond flour dough.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup softened cream cheese
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, blend together the almond flour, coconut flour, salt, and baking powder until well combined.
  3. Incorporate the softened cream cheese, egg, olive oil, and water into the dry mixture, stirring until a cohesive dough forms. If the dough appears too dry, gradually add more water, a teaspoon at a time.
  4. In a frying pan, warm olive oil over medium heat and add the chopped onion. Sauté for about 3-4 minutes until soft and translucent.
  5. Add the chopped spinach to the pan and cook until it wilts, about 2-3 minutes. Remove from heat and mix in the crumbled feta, garlic powder, black pepper, and optional red pepper flakes. Allow the filling to cool slightly.
  6. Divide the dough into 8 equal pieces and roll each piece into a ball. Flatten each ball into a circle approximately 1/4 inch thick.
  7. Spoon a generous amount of the spinach filling onto the center of each dough circle. Fold the dough over the filling to form a pocket, pinching the edges tightly to seal.
  8. Arrange the filled pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown. Let them cool for a few minutes before enjoying.
