Keto Spiced Orange Honey Cake is a must-try delight!


Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol or preferred keto sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 4 large eggs
  • 1/2 cup unsweetened orange juice
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine the almond flour, erythritol, cocoa powder, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Mix well to combine.
  3. In another bowl, whisk together the eggs, orange juice, melted coconut oil, vanilla extract, and orange zest until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Serve the cake plain or with a dollop of whipped cream or a sprinkle of powdered erythritol for added sweetness.

Notes

  • For a richer flavor, add 1/4 cup of chopped walnuts or pecans to the batter before baking.
  • To make a glaze, mix 1/4 cup of powdered erythritol with 1-2 tablespoons of orange juice and drizzle it over the cooled cake.
