- 2 cups almond flour
- 1/2 cup erythritol or preferred keto sweetener
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 4 large eggs
- 1/2 cup unsweetened orange juice
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- Zest of 1 orange
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, cocoa powder, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Mix well to combine.
- In another bowl, whisk together the eggs, orange juice, melted coconut oil, vanilla extract, and orange zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve the cake plain or with a dollop of whipped cream or a sprinkle of powdered erythritol for added sweetness.
Notes
- For a richer flavor, add 1/4 cup of chopped walnuts or pecans to the batter before baking.
- To make a glaze, mix 1/4 cup of powdered erythritol with 1-2 tablespoons of orange juice and drizzle it over the cooled cake.
