Instructions
- Whisk the eggs, heavy cream, salt, and black pepper together in a mixing bowl until smooth and airy.
- Heat the olive oil in a non-stick frying pan over medium heat.

- Pour the egg mixture into the pan, ensuring it envelops the chorizo evenly.
- Cook undisturbed for 3-4 minutes, occasionally lifting the edges with a spatula.
- When the base is firm but the top is slightly soft, sprinkle the shredded Manchego cheese over one side of the omelet.
- Gently fold the omelet in half over the cheese and cook for an additional 1-2 minutes until the cheese is melted.
