Ingredients

  • 2 cups almond flour
  • 1/2 cup granulated erythritol
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • For the glaze:
  • 1/2 cup powdered erythritol
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine the almond flour, granulated erythritol, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. While the cake is cooling, prepare the glaze by mixing the powdered erythritol, lemon juice, and almond milk in a small bowl until smooth. Adjust the consistency with more almond milk if needed.
  8. Once the cake is completely cool, drizzle the lemon glaze over the top. Let it set for a few minutes before slicing.

  • For a richer flavor, consider adding a teaspoon of lemon extract to the batter.
  • You can substitute the almond flour with coconut flour, but use only 1/2 cup as coconut flour absorbs more moisture.
