- 2 cups almond flour
- 1/2 cup granulated erythritol
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- For the glaze:
- 1/2 cup powdered erythritol
- 2 tablespoons fresh lemon juice
- 1 tablespoon unsweetened almond milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine the almond flour, granulated erythritol, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, lemon zest, lemon juice, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- While the cake is cooling, prepare the glaze by mixing the powdered erythritol, lemon juice, and almond milk in a small bowl until smooth. Adjust the consistency with more almond milk if needed.
- Once the cake is completely cool, drizzle the lemon glaze over the top. Let it set for a few minutes before slicing.

- This recipe serves 8.
- For a richer flavor, consider adding a teaspoon of lemon extract to the batter.
- You can substitute the almond flour with coconut flour, but use only 1/2 cup as coconut flour absorbs more moisture.
