- 2 tablespoons extra virgin olive oil
- 1 small yellow onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, finely minced
- 1 teaspoon ground coriander
- 1 teaspoon sweet paprika
- 1/2 teaspoon chili flakes (optional)
- 1 can (14.5 ounces) crushed tomatoes, with juices
- 1 cup baby kale or Swiss chard, roughly chopped
- 4 large eggs
- 1/2 cup crumbled feta cheese
- Salt and black pepper to taste
- Chopped fresh basil or mint for garnish (optional)
Instructions
- Warm the olive oil in a large skillet over medium heat. Add the chopped onion and green bell pepper, sautéing until tender, about 5 minutes.
- Mix in the minced garlic, ground coriander, sweet paprika, and chili flakes (if using). Sauté for an additional minute.
- Stir in the crushed tomatoes with their juices, seasoning with salt and black pepper. Simmer for 5-7 minutes.
- Incorporate the chopped baby kale or Swiss chard, cooking until just wilted, about 2 minutes.
- Make four small indentations in the mixture and crack an egg into each. Cover and cook for 5-7 minutes, or until eggs are done to your liking.
- Sprinkle crumbled feta cheese over the eggs and cover for another minute to soften the cheese.
- Garnish with fresh basil or mint if desired, and serve hot from the skillet.
Notes
- Feel free to adjust the spice level by adding more or less chili flakes.
- This dish can be served with crusty bread or enjoyed on its own for a low-carb meal.
