Ingredients

  • ½ cup granulated erythritol

  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ½ cup cream cheese, softened
  • ½ cup granulated erythritol
  • ¼ cup sugar-free honey substitute
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt. Mix well.
  3. Add melted butter, egg, and vanilla extract to the dry ingredients. Stir until a dough forms.
  4. Press the dough into a 9-inch pie pan evenly across the bottom and up the sides.
  5. Bake the crust for 10-12 minutes or until set. Remove from the oven and let cool completely.
  6. In a separate bowl, whip the heavy cream until soft peaks form.
  7. In another bowl, beat the cream cheese and erythritol until smooth.
  8. Add the sugar-free honey substitute, vanilla extract, and sea salt to the cream cheese mixture. Mix until well combined.
  9. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  10. Pour the filling into the cooled pie crust and smooth the top.
  11. Refrigerate for at least 2 hours to set before serving.
