  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • Chopped pistachios or almonds for garnish (optional)

Instructions

  1. Prepare the cauliflower rice; if using frozen, ensure it’s thawed and excess moisture is removed. For fresh cauliflower, chop florets into small pieces and pulse them in a food processor until they achieve a rice-like texture.
  2. In a saucepan, combine the cauliflower rice with almond milk, heavy cream, erythritol, saffron threads, ground cardamom, vanilla extract, and salt. Mix thoroughly to ensure all ingredients are well blended.
  3. Set the saucepan over medium heat and gently bring the mixture to a simmer, stirring consistently to avoid any sticking to the bottom.
  4. Once it reaches a simmer, lower the heat to maintain a gentle cook for about 15-20 minutes. Stir occasionally until the pudding thickens and the cauliflower becomes tender.
  5. Take the saucepan off the heat and incorporate the butter, stirring until it melts completely and is evenly distributed throughout the pudding.
