- 1 teaspoon fresh lemon juice
Instructions
- Preheat your oven to 325°F and prepare a mini muffin tin with paper liners.
- In a large bowl, mix together the almond flour, cocoa powder, erythritol, melted butter, vanilla extract, and sea salt until a crumbly dough forms.
- Press about a tablespoon of this mixture firmly into the bottom of each muffin liner to create a base.
- In a separate bowl, whip the softened cream cheese until creamy and smooth.
- Gradually incorporate the sour cream, erythritol, rose water, saffron (along with its infused water), egg, and lemon juice, blending until well combined.
- Spoon the creamy cheesecake filling over the prepared crusts in the muffin tin, filling each liner about three-quarters full.
- Bake in the preheated oven for 15-18 minutes, watching for the edges to firm up while the center remains slightly soft.
- Allow to cool to room temperature before transferring to the refrigerator. Chill for at least 2 hours to set properly.
