  • 1/2 cup sour cream
  • 1/4 cup erythritol sweetener
  • 1 teaspoon rose water
  • 1/4 teaspoon saffron threads, infused in 1 tablespoon hot water
  • 1 large egg
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your oven to 325°F and prepare a mini muffin tin with paper liners.
  2. In a large bowl, mix together the almond flour, cocoa powder, erythritol, melted butter, vanilla extract, and sea salt until a crumbly dough forms.
  3. Press about a tablespoon of this mixture firmly into the bottom of each muffin liner to create a base.
  4. In a separate bowl, whip the softened cream cheese until creamy and smooth.
  5. Gradually incorporate the sour cream, erythritol, rose water, saffron (along with its infused water), egg, and lemon juice, blending until well combined.
  6. Spoon the creamy cheesecake filling over the prepared crusts in the muffin tin, filling each liner about three-quarters full.
  7. Bake in the preheated oven for 15-18 minutes, watching for the edges to firm up while the center remains slightly soft.
  8. Allow to cool to room temperature before transferring to the refrigerator. Chill for at least 2 hours to set properly.
